Blueberry baked donuts: a healthy take on a delicious dessert

What makes this recipe special?

Blueberry and lemon have been my favorite combo for a long time, and they come together perfectly in this recipe. These donuts make for a delicious dessert or mess-free breakfast, and they can be enjoyed at any time of day. Using avocado and Greek yogurt (just trust me on this one) makes for a moist texture and adds in healthy fats without compromising the mouth-watering flavor.

What kind of Greek Yogurt should I use?

I found that blueberry flavored yogurt gave the donuts an extra touch of flavor and sweetness, but plain or vanilla Greek yogurt would also work well.

How the heck do I get these out of the pan?

Just be sure to properly oil the pan before adding in the batter. Once the donuts are done cooling, flip the pan upside down and gently shake. The donuts should plop right out!
